Soup, It’s What’s for Dinner – Homemade Zuppa Toscana

Homemade Zuppa Toscana ?? The new family favorite, and it’s healthy for you too!

Ingredients

2 lbs lean Italian Sausage
1 onion chopped
1 lb fresh chopped kale
3 cloves minced fresh garlic
2 lbs russet potatoes (diced small)
4-6 cups low sodium, fat-free chicken broth
1/2 cup low fat FairLife milk, a great lactose free option (or use light cream)
1/4 tsp red pepper flakes (optional)
1/2 tsp dried rosemary
Sea Salt & Pepper to taste

Instructions: 

In a large non-stick skillet, sauté sausage, onion and spices until browned while you boil potatoes in chicken broth. Add browned meat mixture to the broth and simmer 20 – 30 minutes until potatoes are soft. Add kale until it softens, then stir in milk. Let simmer for 10 – 15 minutes. Serve hot with Parmesan cheese (optional). It tastes better than the Olive Garden, and makes a perfectly balanced, hearty meal! It also makes for a great Grab-n-Go option for lunch!
