One Pot Meal – Chicken Marsala Fettuccine Pasta

One Pot Chicken Marsala Fettuccine Pasta

Ingredients

1.5 lbs of chicken breast sliced thin, scallopini style
3 cloves fresh garlic minced
2 Shallots minced
2 Tbsp olive oil
6 oz prosciutto sliced thin
1 lb sliced Cremini mushrooms
3-4 cups fresh baby spinach
8 oz homemade fettuccine pasta
3 cups low sodium chicken broth
1 cup Marsala wine
1/2 cup light cream
2 tbsp light butter
1/2 cup shredded cheese (I used a 3 cheese blend of Parmesan, Asiago & Romano – or you can use Parmesan)

Instructions: 

In a large non-stick skillet, heat your olive oil on medium-high heat and then sauté your chicken, prosciutto, garlic and shallots until all are browned and cooked. Add 1 cup of the chicken broth and your mushrooms, and sauté until mushrooms are soft. Add your Marsala wine, the rest of your broth and light cream, butter and pasta. Bring to a light boil and stir to make sure all pasta is coated with liquid. Cook for 6-8 minutes or per the pasta instructions. Add spinach (optional) and cheese the last 2 minutes to allow time for spinach to wilt and cheese to melt. Most important instruction…. Enjoy! It took about 25-30 minutes with only one pot and one cutting board to clean (if you serve on paper plates!)
